FEATURES

After a careful selection in the vineyard, the finest bunches of Trebbiano Toscano and Malvasia Bianca del Chianti are left to dry naturally through a gentle dehydration process lasting around four months. The resulting must is then transferred into small wooden barrels known as caratelli. This is where Vin Santo begins its long alcoholic fermentation, followed by maturation. It is bottled after four years. Amber-yellow in colour, it offers aromas of dried fruit and honey on the nose. On the palate, it is smooth, delicately sweet, harmonious and intense.

FOOD PAIRINGS

How does a meal in Tuscany end? With a cantuccio and a small glass of Vin Santo! The ultimate after-dinner wine, our Vin Santo is named after Grandpa Alceste, our great wine master. Still served in Tuscan trattorias with the classic cantuccini to be dipped, strictly, into the glass it’s the perfect match for traditional Tuscan pasticceria secca (assorted biscuits and dry sweets): ricciarelli, cavallucci, panforte, and brigidini di Lamporecchio. Try it with fruit tarts, too or with castagnaccio. Personally, I love it with cheese.
